Harvest Begins for Turkey's Famous Çubuk Pickling Cucumbers

The harvest of cucumbers, the key ingredient for Turkey's geographically registered Çubuk pickles, has commenced in the Çubuk district. Despite the continuing hot weather, producers are heading to the fields before dawn to ensure they don't miss the optimal ripening period for pickling.

Daily harvests yield approximately 80 sacks of cucumbers, depending on the number of workers and field productivity. The rapid growth of the cucumbers necessitates a concentrated harvesting effort, as delaying collection can compromise their pickling quality. This intensive pace ensures the timely processing of the crop.

Cucumbers registered with geographical indication by the Turkish Patent and Trademark Office in 2017 are planted in March and April. After a growing period of about four months, the harvested produce develops its unique flavor, attributed to the region's climate, fertile soil, and a long-standing tradition of cultivation.

A significant portion of the harvested cucumbers is sent to local pickle production facilities in the district. There, they are carefully prepared and processed for consumption. Millions of jars of Çubuk pickles are produced annually, destined for tables across Turkey and exported to various countries worldwide. The pickling process involves adding garlic, chili peppers, bay leaves, and dill, which gives the Çubuk pickle its characteristic aroma. After fermentation with grape vinegar and citric acid for about a month, the pickles are ready for consumption and packaging.
