Vilnius, Lithuania – In the heart of Vilnius's Old Town, the family-run restaurant "Botanist" strives to provide a holistic dining experience, blending exceptional cuisine with a captivating atmosphere. The establishment, which began as a cocktail bar in 2018, has blossomed into a full-fledged restaurant with a distinct culinary identity.

Initially focusing on refreshing cocktails made with house-made syrups, "Botanist" gradually expanded its concept to include a robust kitchen team and a unique gastronomic vision.

The restaurant's interior, adorned with abundant greenery, is designed to be an escape from the city's hustle. Chef Nikita Gerasimov, a member of the Lithuanian national chefs' team, draws inspiration from Mediterranean and Latin American cuisines. "Our dishes are colorful, vibrant, and full of unexpected flavor combinations," says co-founder Martina Mackevičienė. "We draw on the traditions of these regions but are not afraid to interpret them in our own way. We want the food to be not only delicious but also visually appealing."

Beyond its à la carte menu and tasting options, "Botanist" offers a diverse setting for its patrons. In warmer months, guests can dine in the charming inner courtyard. The restaurant also hosts vinyl nights and live music concerts, creating an ambiance that often encourages guests to linger longer than planned. "We aim to provide a comprehensive experience – to reward our guests with new flavors, discoveries, and moods," the owners share. "It seems we are succeeding, as guests who come for dinner often stay longer than they planned. Watching couples and groups of friends lose track of time in the space we've created is our greatest pleasure."
