CDMX restaurants fuse Korean barbecue with Thai flavors

Mexico City's vibrant culinary scene is set to host a unique gastronomic fusion this September as SSAM and Galanga join forces. This collaboration brings together the rich traditions of Korean barbecue with the distinct aromatic, sour, and spicy notes characteristic of Thai cuisine.

The limited-time pop-up, running from August 28 to September 30, 2026, aims to showcase how two deeply rooted culinary identities can harmoniously dialogue on the plate. Diners will find themselves at the center of the experience, with the grilled dishes complemented by an exclusive selection of Mexican wines.

A highlight of the menu is the reinterpretation of the classic Korean Galbi (beef ribs). For this special occasion, the meat is marinated in Nam Jim Jaew, a quintessential Thai sauce that imparts an herbal, spicy, and intense profile. This bold marinade is applied to the charcoal-grilled ribs, creating a unique flavor combination.

The dining experience retains the ritualistic nature of Korean meals, featuring banchan (small fermented and pickled side dishes), steamed rice, fresh vegetables for wraps, and miso soup. The collaboration extends to a four-course tasting menu, which includes Korean fried chicken and traditional accompaniments, all thoughtfully paired with wines from Mexico's Guanajuato, Querétaro, and Zacatecas regions.

This cross-cultural culinary event is available for lunch and dinner at two SSAM locations in Mexico City: Galerías Insurgentes and Centro Santa Fe. The fusion promises an adventurous palate journey for enthusiasts of Asian gastronomy.
