Concepción declares anticucho a cultural and gastronomic heritage

Concepción has given its signature anticucho an official place in the municipality’s identity. During the third Anticucho Festival, Mayor Mauricio Viera promulgated Municipal Autonomic Law 279/2026, declaring the grilled dish a cultural and gastronomic heritage of Concepción.

The municipal council had already approved the measure. It recognizes anticucho’s historical, social, economic, and gastronomic importance, as well as its place in the identity of Concepción families.

Viera underlined the dish’s importance during the festival’s opening. “Anyone who came to Concepción and did not eat an anticucho is as if they had not come,” he said. He also praised the women entrepreneurs who prepare and sell anticuchos every day, particularly around the town’s main square. “I greatly value the enterprise of our brave and courageous women who go out to the corner of our square every day,” he said.

The mayor said the municipality would seek to improve the conditions and spaces used by anticucho vendors. The stated aim is to strengthen their work and provide better service to visitors.

At the festival’s central ceremony, Viera formally enacted the law, saying it would preserve one of Concepción’s most representative culinary traditions, reinforce Chiquitano identity, and promote anticucho as part of the municipality’s cultural and tourism offering.
