This tomato salad recipe for winter is a family favorite

Laima Ralienė, a resident of the Kelmė district in Lithuania, has found a beloved way to preserve her abundant tomato harvest: a flavorful tomato salad intended for winter consumption. This recipe, born from a desire to use up excess produce, has become a cherished annual tradition for her family and extended relatives.

Inspired by a sauce recipe, Laima adapted the method by roasting the vegetables, including tomatoes, peppers, carrots, and onions, before processing them. While a sauce version was less popular with her family, the roasted vegetable salad proved to be a hit. "When I have tomatoes, I always prepare tomato salad – it's very tasty to eat it on its own in winter or serve it with meat," Laima shared.

The preparation involves chopping the vegetables, seasoning them with salt, pepper, a pinch of sugar, and herbs, then drizzling with olive oil. They are then roasted at 170–180 degrees Celsius for about 1.5 hours. Once cooked, the mixture is placed into sterilized jars and sealed. Laima notes that while the salad keeps well in a cool place, its deliciousness often means it doesn't last long.

Her husband, friends, and relatives are all enthusiastic fans of the tomato salad. The popularity of Laima's creation is such that receiving a jar as a gift is met with great appreciation. Laima generously shares her recipe, allowing others to enjoy this family-favorite winter preserve.
